This is not your typical core release. Barrel 125 was personally chosen by our founder and head distiller as a standout cask, matured in re-coopered Barossa Shiraz barrels and bottled as a one-off single malt to give our drinkers a taste of the Collectors world.

Aged beside the Indian Ocean, the result is a whisky layered with dark fruit, silky oak, and quiet intensity. It carries the boldness of Barossa reds with the elegance of our triple-distilled malt. Rich, refined, and deeply expressive, it’s a whisky that rewards time, patience, and attention.

Only one barrel. Never repeated. Reserved for those who value flavour with a story.

Tasting Notes

  • Nose: Ripe plum, blackberry compote, and toasted French oak with hints of dark cocoa

  • Palate: Spiced red fruit, soft leather, and roasted almond over a backbone of warm malt

  • Finish: Long, structured, and elegant with lingering notes of Shiraz tannin, dried cherry and char

  • Mouthfeel: Full and textural with a satin-like weight and a gently drying edge from seasoned oak
