Often the hardest style of whisky to create, we use a grain bill of over 50% corn, mixed with malted barely and wheat. The difficulty of being a brewery and a distillery has meant the team has had to be creative and not ferment on the malt, rather to utilise the lauter tun to create a clean wash. The clean wash has enhanced the flavour profile to express the vanilla, corn and caramel notes and a restrained oakiness from the barrel.
