At the start of 2022, after drinking some amazing Highland whisky together, our distilling team decided to create their version of Highland malt whisky.
Using malts brought in from Scotland specifically for the style, we blended them with Western Australian malts to create our version of a Highland Whisky. We barrel aged these in virgin oak, char #3 barrels, which has given an amazing caramel, restrained leather, vanilla, spiced tea flavour. A bottle to be savoured.
